Never pass a chance to eat the mighty pomegranate. This incredible fruit is proof that a higher intelligence must exist. It is perfection. Loaded with powerful antioxidants, this super food is a natural hydrant that delivers a punch of vitamins and minerals that other fruits can only match when eaten twice.

Pomegranates are originally from Southern Asia, Iraq, and other areas of the Middle East. Yep, they are quite exotic, so do not complain too much about paying around $1 per fruit. They do not come around the way limes do.

For this recipe, you will be eating the pomegranate in pudding form, which is very easy to do, with chia seeds. This treat, just like the pumpkin, apple cinnamon, and eggnog chia seed puddings that we’ve recently published, is a great paleo/vegan breakfast, snack or after dinner treat. It’s so easy to make, filling and packs a super antioxidant punch with the right combination of ingredients. 

First, let’s do some pomegranate 101 from WikiHow:

    Do not go about biting off a pomegranate like if it were an apple, because it will be a bad idea. You eat the SEEDS, not the fruit. The fruit is made of seeds. So, when you open the inside of it, run your fingers and you scoop up the seeds.  They are very juicy.
  • When you eat pomegranates, make sure that they have tough and thin skin.
  • You must cut off the crown of it
  • It is suggested that you split it in quarters to get the most out of the seeds and not cause a hot mess.

PROCESS AND INGREDIENTS

All you need for a 1 person servings is:

1 pomegranate

1/2 cup of chia seeds

1 cup of Almond or coconut milk

Honey or maple syrup to taste

Technology:

Scoop

Blender

Sifter

Napkin

Bowl

Ok, now that you know how to eat it, let’s explore how to juice it. For this recipe you will need the juice of the pomegranate.  Then, you are simply going to combine the juice with the milk and soak the chia seeds.

Pomegranate Milk

  1. Take all the seeds of the pomegranate. Scoop them up or smack the back of one of the quarters and they will fall in your bowl.
  2. Transfer all the seeds, from the bowl, into the blender
  3. Add the milk and blend
  4. Once the pomegranate milk is made, grab the bowl again and pour the contents through a strainer or cheesecloth.

Pudding

  1. Once you strain the milk, add the chia seeds and sweetener to the milk.
  2. Stir vigorously for the first 2 minutes and refrigerate overnight.
  3. The seeds will expand and become jelly. The consistency of the milk plus the pomegranate and chia seeds will provide the pudding base.  Top the pudding with the your favorite fruits, nuts or even coconut flakes. This is really all there is to it!
