Poha Recipe

Poha is an Indian snack and made of flatten or beaten rice and mixed vegetables. It is wholesome, filling and so tasty that you can have it any time of the day.you can make them more flavorful by adding onions, ginger garlic paste, lemon juice, chilies and top them up with bhugiya sev or mixture of your choice. I some time use some of them to add a little twist.
Prep time: 1 minutes
Cook time: 10 minutes
Serves: 2

Ingredients: -

  • 2 cups Poha (Beaten Rice)
  • 1 Potato peeled and cubed
  • 1 cup Mixed vegetables chopped(carrot, cauliflower, cabbage, beans, peas)
  • 1 Onion
  • 2 Green Chilies
  • 1/4 tsp Mustard Seeds
  • 1 sprig Curry leaves
  • 1 tsp Ginger Garlic paste (optional)
  • 2 tbsp Oil
  • 1/4 tsp Turmeric powder
  • 2 tbsp Lemon juice
  • 4 tbsp Coriander leaves chopped
  • Salt to taste

Method: -

 

  • Soak the flatten rice in enough water to wash and soak.
  • Drain the water and keep aside.
  • Cut onions , potatoes (peeled), and all vegetables.
  • Heat oil in a kadai/ wok or pan add mustard seeds, curry leaves and fry until they crackle.
  • Add onion, ginger garlic paste and saute for few minutes, then add potato and chopped mixed vegetables and cook with the lid on for some time on low flame till they become soft.
  • Add turmeric powder, chilies, salt and the wet flattened rice.
  • Mix them and keep the flame to medium and let the poha cook for 5 minutes with the lid on.
  • Serve immediately with chopped coriander chilies and mixture of your choice.
  • Keep it on slow flame for 5- 7 minutes.
  • Let it cool for sometime and add then lemon juice.
