Holidays mean a lot of food. And, holidays mean a lot of leftover food! Such is the case for ham. I mean when you bake a ham, it's a given that there will be leftovers. And, what do you do with that leftover ham that's oh, so yummy? Well, you make this pineapple ham jalapeno casserole! Now, you can make it in a cast iron skillet or a baking dish. Really doesn't matter. I love cooking in cast iron because when you pull it out of the oven, and as it cools, it's still going to stay warm enough for serving after a while. Yes, the cast iron is like a 'mini' oven for keeping it warm. Now, don't be diving into this casserole right out of the oven. You want to let it 'rest' a tad bit. But, be assured no matter how much it rests, it's gonna be a messy scoop when you slice it!

Pineapple Tidbits Are the Magic

What makes this pineapple ham jalapeno casserole sooooooooooooo amazing? Well, besides the salty ham, creamy melted cheese and the dressing that absorbs all those liquid flavors, you have the subtle sweetness of pineapple tidbits! Truly it's an explosion on your palate. And, I think this casserole personifies comfort food. Not to worry if you have some leftover, it stores well in an air tight container in the refrigerator and can be warmed in the microwave the next day. I love serving the casserole over crispy crunchy cool lettuces that just add to the circus of textures!

You can be assured that Dole Sunshine's pineapple tidbits are the freshest canned pineapple on the planet. And, they're packed in natural juices. So don't discard this juice as it's quite refreshing to use in recipes or to simple sip! Really pineapples, whether they're in chunks, tidbits, crushed or sliced, are so exceptionally delicious and versatile. I mean, a perfect 'pick me up' in the middle of the afternoon would be a scoop of cottage cheese, pineapple and some walnuts. It doesn't get much better or healthier. But, I can assure you that you'll get rave reviews when you make this pineapple ham jalapeno casserole! Simple, easy and all in one skillet!

  • Preheat oven to 400
  • 2 to 2 ½ cups ham, leftover, cut into bite size pieces
  • 2 packages (10 oz.) Baby Broccoli Mix, previously frozen, at almost room temperature
  • 1 can (20 oz.) Dole Sunshine Pineapple Tidbits, drained, reserve liquid
  • 1 can (10.5 oz.) Cream of Celery Soup
  • 1 container (7.5 oz.) Soft Cream Cheese Spicy Jalapeno, almost room temperature (Philadelphia Cream Cheese)
  • 1 egg
  • 1 box (6 oz.) Stove Top Stuffing Mix
  • 2 cups grated cheddar
