Well its Friday night and I’m back in Blighty. Jet lag is playing its part so I’ve no idea if it’s cocktail hour or not but I’m still on Barbados time and it was always cocktail hour there!
Here is a classic cocktail that became a firm favorite whilst I was away. I will be recreating this at home in a pretty glass with the finishing touches and not the obligatory plastic poolside glass photographed below.
Piña Colada
30 ml white rum
30 ml cream of coconut
90 ml pineapple juice
Blend all the ingredients in a blender with ice, pour into a chilled glass and garnish with a slice of pineapple and a maraschino cherry. A great refreshing drink that will always remind me of Barbados, enjoy!
