I love french fries! Its my ultimate guilty pleasure that I could live off. I think it might be, because I use to live off them when I was a teenager. My parents never understood the whole vegetarian thing and they would always make me french fries and I always felt to bad to say no, but over the years I’ve been trying to make a healthier baked french fry, that’s chunky and soft in the middle.
This recipe might seem like a lot of work, but its really worth it! Boiling the fries first keeps them nice and soft on the inside with a nice crispy outside when baked. Pair this with my garlic and herb french fry dip for pure bliss!
FRENCH FRIES/ CHUNKY CHIPS – serves 4
Ingredients
- 6 medium potatoes, cut into large french fries
- 1 – 2 tbsp olive oil
- 1/2 tsp Himalayan salt or sea salt
- 1/4 tsp black pepper – optional
Directions
Preheat the oven to 375 degrees F.
In a large pot bring 4 cups of water to a boil. Add the potatoes and boil for 4-5 minutes or until fork tender ( be careful not to overcook the potatoes). Strain the potatoes.
In a large bowl add the potatoes, oil, salt and pepper. Toss to coat.
Transfer the fries to a baking sheet ( NOTE: for crispier fries, place the baking sheet in the oven while preheating and remove carefully when placing fries on the baking sheet). Bake for 20 minutes, until golden. Rearrange the fries halfway through baking time, so they brown evenly.
GARLIC AND HERB FRENCH FRY DIP
Ingredients
- 3/4 cup vegan mayonnaise
- 2 tbsp red wine vinegar
- 1 tbsp garlic paste
- 1 tsp fresh chives, finely chopped
- 1 tsp fresh basil, finely chopped
- 1 tsp black pepper
- 1/4 tsp salt
Directions
Combine all the ingredients in a small bowl.
