Pearl Sugar Waffles

Pearl sugar waffles. Oh, what a new treat for your palate. Of course, we love waffles. And, the goddess of waffles is the Leige waffle or the Belgian Waffle. The only problem is that they take more time to make that regular waffles. And, sometimes we're just not willing to devote that time. So, what's a good alternative? My recipe for pearl sugar waffles! But, first what's pearl sugar?

Pearl sugar are tiny 'pearls' of crunchy sweet happiness. When the batter bakes in the waffle iron, there is some dissolving, but there remains hidden bursts of crispy crunch and visible evidence of caramelized sugar on the waffles. Much different than a waffle sweetened with regular refined sugar.

Also sometimes referred to as 'sugar nibs', these tasty nuggets can be used in so many different recipes. It's worth the investment of having some in your pantry. I order my pearl sugar from Amazon in ten pound bulk bags. Of course, there are smaller versions of the pearl sugar if you don't want that much. But, trust me, if you love to bake then you'll go through that pearl sugar like you do a 10 pound bag of refined sugar!

This recipe is easy and quick. And, honestly, you do get a flair for the more sophisticated Leige Waffle when you bite into it. Think about these pearl sugar waffles as a dessert, too. I mean there are so many ways to dress them up and serve. Grilled peaches on top. A scoop of vanilla bean ice cream. Fresh berries. A drizzle of chocolate ganache. A dollop of all-fruit jam. Or something really easy like chopping up your favorite candy bar(s), sprinkling on top then popping into the oven for a few seconds just to get a melt going on!

Ingredients

  • Cooking spray
  • 1 cup self-rising flour
  • 1 ½ Tbl. baking powder
  • Pinch sea salt
  • 1 tsp. vanilla
  • 1 cup coconut milk (can sub buttermilk or whole milk)
  • 1 egg, beaten
  • 2/3 cup pearl sugar
  • 4 Tbl. butter, salted & room temperature

Instructions

  1. Note: You will need a waffle pan (3" openings) for the baby waffles. Put on medium heat to get hot. Coat openings with cooking spray right before putting in the batter.
  2. In a large mixing bowl, combine the flour, baking powder, salt, vanilla, coconut milk, and egg. Blend into a thick batter. Fold in the pear sugar. Coat the openings with cooking spray.
  3. Dollop in about 2 heaping tablespoons of batter in the middle of three of the openings. (Don't put too much batter in because it will spread out into the opening.)
  4. Cook about 2 to 2 ½ minutes, then gently flip to an open waffle circle and cook on the other side about 2 to 2 ½ minutes.
  5. Coat the opening where the waffle was with cooking spray and put in more batter to start other waffles. Remove cooked waffles to a plate, dollop on a little butter.
  6. (It is important not to crowd waffles or try to fill all the openings then flip the waffle to the same opening when cooking on the other side-it gets tricky.)

Notes

The pearl sugar adds a delightful surprise to the palate when you get a crunchy bite of sweetness!
