Peach Bellinis are no longer just for Summer! I'm showing you how to make the perfect sweet, bubbly and delicious frozen Bellini using frozen peaches!
For this recipe I pair tangy raspberries, sweet peaches and bubbly processco to make an unbeatable flavor combination that is perfect for any holiday!

Ingredients
- Peaches: I'm using frozen for this recipe, it ensures you can make this drink year round and also makes it super cold and refreshing. However, if you have summer ripe peaches, they will also work (and frankly, it will be phenomenal)
- Sugar: just regular old granular sugar. You can use monk fruit to reduce carbs, but the simple syrup may become grainy over time. Allulose is a low-carb sweetener. I have had better results for simple syrups.
- Raspberries: I make a quick raspberry simple syrup with water, sugar and raspberries. If you don't want the raspberry peach combo simply skip the raspberries and make a true simple syrup.
- Prosecco: follow your heart, use whatever bubbly you prefer.
How to Make Peach Bellinis
- Combine simple syrup and frozen peaches in a blender and puree. You may need to add additional water to get the mixture to puree.
- Add approximately ¼ cup of peach mixture to the bottom of a glass. Top with Prosecco.
- You may wish to give it a good stir before drinking.
Raspberry Simple Syrup
- Combine sugar and water in a small saucepan and bring to a boil, stirring until all sugar dissolves.
- Add the raspberries and simmer, covered, for 2-3 minutes, until raspberries disintegrate.
- Cool, and pour through a sieve to remove raspberry seeds.

Simple syrup
- ½ cup water
- ½ cup sugar
- 1 cup raspberries
Bellinis
- 1 recipe simple syrup
- 3 cups frozen peaches
- 750 mL Prosecco
Instructions
