Pea Soup with Cashew Cream

Hello! I hope everyone had a fun new years.  I went to a Olympics themed party, we decided to go as team Japan, we did really well in all the games and came second ( I dominated at ping pong :P ) .

What did you do for new years?

Its been really rainy and chilly here lately and the best thing to do in weather like this is have a nice warming soup.  This is my favorite soup recipe, I came up with this recipe, because of my love for peas.  I keep the ingredients simple so you can taste the peas clearly this is great with a big drizzle of cashew cream.

PEA SOUP WITH CASHEW CREAMserves 6

Ingredients

  • 1 tbsp sunflower oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 3 1/2 cups frozen baby peas
  • 3 cups vegetable stock ( add more stock for a runnier soup)
  • 1/2 tsp nutmeg
  • salt and pepper to taste

Directions

In a large  pot heat the oil till hot.  Add the onions and garlic and cook till translucent and slightly browned. Lower heat to medium.   Add the peas, vegetable stock and nutmeg cook for 10 minutes.

Remove from heat and puree in a blender until smooth. Season with salt and pepper.  Pour into  bowls and drizzle with cashew cream.  Enjoy with  crusty bread.

CASHEW CREAM

Ingredients

  • 1/4 cup cashews
  • 1/4 cup water

Directions

Blend until smooth and creamy.
