A homemade tasty soup, with a bit of a kick to it!
What you will need...
1 onion 4 medium potatoes 1 cloves of garlic1 tsp cumin seeds1tsp coriander seedsHandful of fresh coriander1 red chilli1 1/2 cm cube of fresh ginger300-400gms frozen peas1 stock cube made up with 3/4 ltr boiling water3 tbs half fat crème fraiche
What you will need to do...
- Grind together cumin and coriander seeds together with a pestle and mortar (or can use already ground)
- Chop and fry garlic, ginger, chilli, cumin and coriander for 1-2 mins on a medium heat in a saucepan
- Chop onions and dice the potatoes before adding them into the saucepan
- Add chicken stock and boil for 10-15 mins
- Add peas and simmer for a further 5-10 mins
- Add half of the fresh coriander and stir
- Take off the heat and allow to cool for 2-3 mins before blitzing with a hand blender
- Just before serving add remaining coriander and crème fraiche (save a little aside for garnish)
- Serve in bowl with a dollop of crème fraiche, sprinkling of fresh coriander and a hunk of rustic bread
