 Pav Bhaji often called as Mumbai Pav Bhaji is a wonderful street food which is the easiest way to get your kids eat vegetables. It is like a vegetable stew where you can add vegetables like cauliflower, peas, beans, cabbage, spinach, capsicum, carrots with potato and tomato. Pressure cook potato and other veggies except tomatoes and capsicum for sometime or till they become tender. And they all are mashed up and cooked in spices and tomato to make a mouthwatering gravy dish which are eaten with Pav bread. Just made it for dinner today and the detailed procedure is as follows.

Prep time: 20 minutes
Cook time: 20 minutes
Serves: 4

Ingredients: -

3 Potatoes medium sized
2 Onions medium sized
2-3 Tomatoes large
3-4 cup mixed vegetables(cauliflower, peas, beans, cabbage, spinach, capsicum, carrots)
2 tsp Ginger Garlic paste
1 Lemon Juice
4 tsp Pav Bhajji masala
1 tsp turmeric powder
1 tsp Amchur Powder(Dried Mango Powder)
2-3 tsp Butter
2-3 springs of Coriander
Salt to taste
1 tbsp oil
1 tsp Cumin seeds

 Method: -

  • Pressure cook potato and other veggies except onion, tomatoes and capsicum for sometime or till they become tender.
  • Heat oil in a deep bottom pan and kadai and add cumin seeds. Let it splutter and add chopped onions.
  • Fry the onions till they become transparent and add ginger garlic paste and fry for some more time.
  • Add turmeric powder and salt.
  • Add tomatoes and cook till they become tender.
  • Add capsicum finely chopped to this gravy and for in low flame with lid on top of the pan.
  • Prepare the vegetables my mashing them slightly and mixing them in a big bowl.
  • Remove the lid of the pan and add the Pav Bhaji masala and cook in low flame for 1-2 minutes.
  • Add the mashed vegetables and mix well in the masala and adjust salt.
  • cook for sometime and add enough water to get the desired consistency.
  • Let the bhaji simmer for sometime in low flame.
  • After 5 min turn off the flame, garnish it with coriander leaves and mix some lime juice.

  •  To prepare the pav slit and open it.
  • spread butter and toast on a hot griddle or tava from both sides till they become light golden.
  • Take the baaji in a bowl and enjoy with the pav and onions.
