Spinach Soup

This is one of the most soothing soups you’ll ever come across. Spinach soup will give you an utter nurturing feeling of magical taste and healing, all in one cup. This soup can do wonders to your body and has to offer a sense of satisfaction with every sip. The mixture of spinach, garlic and spices is really an experience of a lifetime and packed with flavor. Packed with bursting vitamins, minerals, fiber and plant protein, no soup in the world can compete the awesomeness of this Green Spinach soup. You can happily take this tasteful charm to work in a jar with you so that you can enjoy every sip of it in lunch. The best way to serve it is with sliced avocado or cauliflower rice.

Ingredients

24 ounces spinach or baby spinach
2 cups full-fat coconut milk
2 tablespoons tapioca starch
3 garlic cloves, finely minced
1 onion, finely diced
3 cups bone broth
1 pinch ground nutmeg
1 pinch cayenne pepper (optional)
3 tablespoons coconut oil or olive oil
Sea salt and freshly ground black pepper to taste

Directions

Heat oil in a pot over medium heat.
Whisk in the tapioca starch slowly. Cook for about 5 minutes.
Add the garlic and onion and cook for 1 another minute.
Pour in the bone broth.
Once the broth is warm enough, place all the spinach in to the pot and cook until the spinach softens.
Add the nutmeg, coconut milk, and cayenne pepper (if using). Stir everything well and cook for another 5 minutes.
Season with salt and pepper to taste and serve.
