How To Make Vegetable Curry
This is a staple Paleo Indian side dish to have handy that will go with absolutely any main meal. This versatile vegetable curry is also amazing as a standalone vegetarian main meal! Features a beautiful combination of Aubergines (eggplant), sweet potato, peas and tomatoes. MMMM

Ingredients
- 2 tbsp coconut oil
- 2 x onions (sliced)
- 2 x 3 finger pinches chilli powder
- 4 x 3 finger pinches coriander powder
- Small piece ginger (chopped)
- 2 x aubergines (sliced)
- 175 g peas
- 125 g sweet potato (cubed)
- 227 g tomato (canned)
- 4 x green chillies
Method
- Fry onions in oil till soft and golden.
- Add Chilli, coriander, ginger, salt and fry for 2 minutes.
- Add aubergines, peas, sweet potatoes and cook for 7 minutes, stirring.
- Add tomatoes, chillies, cover and simmer for 30 minutes.
- Serve and enjoy!
