How To Make Courgette, Peas and Coriander

This is such a cost effective and easy meal you can whip up with ingredients lying around in your kitchen. Great as a side dish to go with your favorite curries and also amazing as a main vegetarian dish on its own!

Paleo Indian Vegetarian Recipe - Courgette, Peas and Coriander

Ingredients


  • 4 tbsp coconut oil
  • 2 onions (sliced)
  • 2 cloves garlic (chopped)
  • 2 green chillies (chopped)
  • Small piece ginger (chopped)
  • Small handful of fresh coriander (finely chopped)
  • Salt
  • 500 g courgettes (sliced)
  • 250 g peas

Method


  1. Fry onion in pan in oil till soft.
  2. Cook garlic, chillies, ginger, coriander and salt for around 5 minutes.
  3. Add courgettes, peas, cover and cook for 30 minutes.
  4. Boil at the end if necessary to evaporate any liquid.
  5. Serve and enjoy!
