How To Make Prawn And Egg Curry
This is truly a marriage made in heaven! A weird version of a surf and turf but it works. I hope you enjoy my Prawn and egg curry recipe!

Ingredients
- 4 tbsp coconut oil
- 1 large onion (chopped)
- 1 clove garlic (Chopped)
- Small piece ginger (chopped)
- 4 x 3 finger pinches coriander powder
- 2 x 3 finger pinches chilli powder
- 4 x 3 finger pinches cumin powder
- 1 tbsp tomato puree
- 300 ml water
- Salt
- 6 hard boiled eggs
- 227 g frozen prawns
- 25 g creamed coconut
Method
- Fry onion till golden in oil in a large pan.
- Fry garlic and ginger for a minute then add all the spices and fry gently for a further 2 minutes (add water if mixture becomes too dry)
- Add tomato puree, then water and salt and cover and simmer for 10 minutes.
- Add eggs ensuring that you spoon some mixture over these if necessary. Cover and cook for 15 minutes.
- Stir in the prawns. When you reach simmering point, add the creamed coconut and bring to simmering point again and then..
- Serve and enjoy!
