Paleo Indian Seafood Recipe - Prawn And Egg Curry

Ingredients


  • 4 tbsp coconut oil
  • 1 large onion (chopped)
  • 1 clove garlic (Chopped)
  • Small piece ginger (chopped)
  • 4 x 3 finger pinches coriander powder
  • 2 x 3 finger pinches chilli powder
  • 4 x 3 finger pinches cumin powder
  • 1 tbsp tomato puree
  • 300 ml water
  • Salt
  • 6 hard boiled eggs
  • 227 g frozen prawns
  • 25 g creamed coconut

Method


  1. Fry onion till golden in oil in a large pan.
  2. Fry garlic and ginger for a minute then add all the spices and fry gently for a further 2 minutes (add water if mixture becomes too dry)
  3. Add tomato puree, then water and salt and cover and simmer for 10 minutes.
  4. Add eggs ensuring that you spoon some mixture over these if necessary. Cover and cook for 15 minutes.
  5. Stir in the prawns. When you reach simmering point, add the creamed coconut and bring to simmering point again and then..
  6. Serve and enjoy!
