How To Make Paleo Tomato ‘Rice’
A Paleo twist on a classic Indian rice dish of the same name. I loved this growing up as a kid and making this ‘Paleo’ has opened up so many possibilities. Goes amazing with pretty much any curry.

Ingredients
- 750 g cauliflower rice
- 1 tbsp coconut oil
- 1 onion (sliced)
- Small piece ginger (chopped)
- 2 tomatoes (chopped)
- Salt
- Small bunch of fresh coriander (chopped, garnish)
Method
- Heat oil in a pan. Fry onion until golden.
- Fry ginger, garlic for a couple of minutes.
- Add cauliflower rice and tomatoes and cook for a further 8 minutes
- Garnish with coriander, serve and enjoy
