How To Make Paleo Chicken Pilau
Chicken Pilau is a staple in many Indian menus and possibly one of the most popular dishes out in the East. Its a meal in one (like the biryani) which doesn’t normally require a curry to go along with it.
This is my Paleo twist on the Chicken Pilau using cauliflower rice and a few other tweaks.

Ingredients
- 1 kg cauliflower rice
- 1.5 kg oven ready chicken (skinned and cut into pieces)
- 3 tbsp coconut oil
- Small cinnamon stick
- Small sprinkle cardamom
- Small sprinkle cloves
- 2 cloves garlic (crushed)
- 2 x 3 finger pinches chilli powder
- 2 x 3 finger pinches fennel seeds
- 5 tbsp coconut milk yoghurts
- 3 x 3 finger pinches salt
- 1 x chicken stock cube
Method
- Heat oil in a large heat proof casserole dish. Fry the cinnamon, cloves and cardamoms for about 30 seconds. Then the garlic, chilli and fennel seeds for a further 30 secs.
- Now fry the chicken pieces, turning and add yoghurt spoon by spoon. COver and simmer this till chicken is tender, this takes around 25 minutes.
- Add cauliflower rice, crush the stock cube and add salt. Cover and cook whilst turning for a further 8 minutes.
- Serve and enjoy!
