Paleo Indian Chicken Recipe - Palak Murg

  • 3 tbsp coconut oil
  • 2 onions (chopped)
  • 2 cloves garlic (crushed)
  • Small piece of ginger (chopped)
  • 4 x 3 finger pinches coriander
  • 2 x 3 finger pinches chilli
  • Salt
  • 750 g skinned chicken legs and thighs
  • 750 g spinach


  1. Fry onions in oil in a large pan until golden brown.
  2. Fry the garlic, ginger, coriander, chilli and salt for 2 minutes
  3. Throw in the chicken and fry till browned all over.
  4. Now add the spinach. Stir well, cover and simmer till chicken is tender. This takes around 35 minutes
  5. If the mixture keeps getting dry, just throw in a splash or two of water so it doesn’t burn.
