Spiced Crockpot Pork Ribs

PREP/COOK TIME: 5 hours 15 minutes

Pork spare ribs boast a lot of delicious, meaty flavor, and they can be cooked in various ways. Here we are adding spice as well as a homemade sauce, then cooking them in a crockpot. This recipe serves 3 people, or perhaps 4 to 5 if you are cooking another meat as well.

Although it is optional, we like to finish them off under the broiler to get them nice and crispy. Keep an eye on them though, since you don’t want them to burn. There are quite a few ingredients in this recipe but you will find the ingredients complement each other perfectly, and the ribs will be melt-in-the-mouth tender.

Ingredients:

3 lbs pork spare ribs
1 teaspoon chili powder
2 teaspoon cayenne pepper
2 tablespoons paprika
1 teaspoon ground cumin
1 teaspoon dried basil
1 cup peeled, chopped tomatoes
2 tablespoons apple cider vinegar
3 minced garlic cloves
1 tablespoon fresh lime juice
1/2 minced small yellow onion
2 peeled, chopped serrano peppers
Salt and black pepper, to taste

Method:

Cut the ribs into individual pieces and rub the chili powder, cayenne, paprika, cumin and basil over them. Put them in a crockpot.

Now mash the tomatoes with the apple cider vinegar, garlic, lime juice, 1/8 teaspoon of salt, onion and serrano peppers. Pour this over the ribs, then cover and cook for 5 hours on low, or until tender. Grind some salt and black pepper over the ribs, then finish them off under the broiler until slightly charred.
