Oven Baked BBQ Beef Ribs

PREP/COOK TIME: 1 hour 10 minutes

There are lots of recipes for beef short ribs but this one is extra-special because we are making a delicious BBQ sauce and baking the ribs in the oven. That means you can enjoy tender beef ribs even if it isn’t grilling weather.

The sauce is so easy to make – you simply have to combine the ingredients and simmer until thick, while the ribs are cooked with bay leaf and garlic on the stove, and then finished off in the oven. This recipe serves 2 or 3 people.

Ingredients:

2 pounds beef short ribs
1 bay leaf
1/2 teaspoon salt
2 garlic cloves
1/2 teaspoon whole black peppercorns
2 tablespoons olive oil

For the BBQ Sauce:

1/2 teaspoon cayenne pepper
1 small yellow onion
2 garlic cloves
1 tablespoon balsamic vinegar
1 cup organic tomato sauce
1 teaspoon salt
1 teaspoon smoked paprika
1 deseeded dried chili pepper
1/2 cup water
1 tablespoon raw honey
3 pitted dates

Method:

Put the ribs in a pot with the bay leaf, salt, garlic and whole black peppercorns. Cover with water then bring to a boil. Turn the heat down and simmer the ribs for 20 minutes.

While the ribs cook, you can put all the BBQ sauce ingredients except the honey in a blender, then puree until smooth. Spoon this mixture into a pan and gently simmer for 10 minutes or until thick. Take the sauce off the heat and stir in the honey.

Now you can preheat the oven to 350 degrees F. Arrange the ribs in a 13 x 9-inch baking dish and pour half the BBQ sauce over them. Drizzle 2 tablespoons of oil on top, then toss to coat.

Bake for about 40 minutes, basting with sauce occasionally. When the ribs are fork-tender, you can serve them with the rest of the sauce on the side.
