Mediterranean Inspired Baked Salmon Filets

PREP/COOK TIME: 20 minutes

Salmon is a healthy option. It is a flavorful fish packed with important nutrients and healthy fats. In this recipe we are flavoring the fish with parsley, garlic and lemon, and cooking it with cherry tomatoes and also some black olives if liked. If you do want to add the olives, you might like to use organic uncured olives if you can find them, since a lot are processed with high amounts of salt which paleo eaters will want to avoid.

This is a colorful recipe inspired by Mediterranean cuisine, Spanish in particular. You will find the parsley and lemon really complement the natural taste of the fish, and garlic – well that goes with just about everything! The baking time should be about 12 minutes, possibly more depending on the thickness of your salmon filets and your oven. When the fish flakes easily with a fork it is done, so it is easy enough to check.

You could wrap the salmon in foil or parchment paper if you like, and that helps trap all the aromatic flavors in there, but we like to bake it on a greased baking sheet so the top of the fish can brown a bit in the oven. That looks nicer and the crispy texture on top is always good. This serves 4 people.

Ingredients:

3 tablespoons olive oil
2 tablespoons chopped fresh parsley
6 minced garlic cloves
Juice of a lemon
4 salmon filets
8 cherry tomatoes
8 pitted black or green olives (optional)
Salt and black pepper, to taste

Method:

Preheat the oven to 375 degrees F. Mix the oil with the parsley, garlic and lemon. Put the fish on a greased baking sheet and grind some salt and black pepper over it.

Next, spread the oil mixture over the salmon and then add the cherry tomatoes to the baking sheet. Add some black olives too, if liked. Bake for about 12 minutes or until done.
