Laos Inspired Spicy Beef

This spicy beef dish is reminiscent of larb, the national dish of Laos. We are using chili sauce and honey rather than sweet chili sauce which is usually packed with sugar, and we are also using ground beef, although some people prefer to use chopped chicken instead. The honey is optional because, although the sweet flavor really does work here, not everyone wants to use it, so if you prefer a more savory result just omit it.

This recipe makes 4 servings and we like to serve it with mixed leaves to contrast with the heat. You can also garnish the finished dish with cilantro. The cashews work well with the flavor and add a nice crunch to the dish.

Ingredients:

1 tablespoon oil
1 chopped yellow onion
1-inch piece fresh ginger, peeled and minced
1 lemongrass stalk (white part only), minced
2 minced garlic cloves
1 1/2 lbs ground beef
2 teaspoons Asian fish sauce
2 tablespoons lime juice
1/4 cup chili sauce or 1 chopped red chili
Honey, to sweeten (optional)
1/2 cup fresh cilantro leaves
1/2 cup torn fresh mint leaves
1/3 cup chopped roasted unsalted cashews
4 lime wedges, to serve

Method:

Heat the oil in a skillet then add the onion and cook for 3 minutes. Add the ginger, lemongrass and garlic and cook for 1 minute, stirring all the time. Now add the beef and cook for 10 minutes or until browned all over. Add the fish sauce, lime juice and chili sauce or chopped chili pepper.

Taste the mixture and add some honey if you want to sweeten it a bit. Cook for a couple of minutes, stirring well, then stir in the cilantro and mint. Serve sprinkled with cashews and offer lime wedges on the side.
