Paleo Dinner Recipes:
Chicken & Spinach Paleo Pizza
PREP/COOK TIME: 35 minutes
Swap your conventional pizza crust recipe for an almond crust and you will find you can make the most delicious pizzas which will fit in well with your paleo way of eating. We are using almond flour and eggs to make a tasty crust, then we’re using our tasty cauliflower sauce recipe and curry powder for the pizza sauce, and finally spinach and chicken for the topping.
Feel free to add any other toppings, such as mushrooms, bell peppers or pineapple, or you could swap the chicken for turkey or even beef. This is a tasty meal that everyone is really going to enjoy. You could pair it with a green salad or just enjoy the pizza as it is.
Ingredients:
For the Crust:
2 cups almond flour (almond meal)
2 tablespoons olive oil
2 eggs
1 teaspoon salt
For the Toppings:
1 medium cauliflower
3 medium garlic cloves
4 oz coconut milk
1/2 teaspoon curry powder
2 cups baby spinach leaves
1 cup chopped cooked chicken breast
Method:
Combine the almond flour, olive oil, eggs and salt to make a dough. Preheat the oven to 350 degrees F. Put the dough between 2 sheets of lightly greased parchment paper and roll it out. You can make it as thin or as thick as you wish and whatever shape you want.
Now transfer the crust on to a baking sheet and cook for about 12 minutes or until the center is cooked. Take the pizza out of the oven and turn up the heat to 450 degrees F.
Combine the cauliflower, garlic, coconut milk and curry powder to make a sauce. If you would like the sauce to have a thinner consistency; add more coconut milk and blend. Continue this until you achieve the desired consistency, season with sea salt and pepper as desired, then spread this over the pizza crust. Now add the chicken and spinach. Return the pizza to the oven and cook for 12 minutes or until the toppings are hot. Serve immediately.
