Pumpkin Popsicles

One of the easiest paleo dessert recipes and the one that kids absolutely love.  So when it’s hot and sunny outside, let the whole family reach for a nice refreshing popsicle.

This is a simple recipe that let’s you make your own. It’s really easy and you don’t need many ingredients. We are combining coconut milk, pumpkin, chocolate chips, honey and pumpkin pie spice to make these gorgeous frozen treats. Although the chocolate chips are an optional ingredient, the flavor of the chocolate does work nicely with the other ingredients in these no-bake popsicles, so they are well worth including if you want to add that chocolate taste. You will find these popsicles are popular with everyone in the family. The kids will especially love them.

Ingredients:
1 cup creamy coconut milk
½ cup pureed pumpkin
¼ cup chocolate chips (optional)
1 tbsp raw honey
1 tsp pumpkin pie spice

Method:

Using a blender or food processor, pulse the coconut milk, pumpkin, honey and pumpkin pie spice until the mixture smooth and creamy. Fill your popsicle moulds with the creamy mixture and place in the freezer for 4 hours. Once the popsicles are frozen, melt the chocolate chips into a liquid form and drizzle the melted chocolate on top of your popsicles. Then put the popsicles back into the freezer for an additional 20 minutes, or until the chocolate has fully set.

  • 1 cup creamy coconut milk

Instructions
  1. In a food processor or blender, combine the coconut milk, pumpkin, honey and pumpkin pie spice and pulse until smooth and creamy.
  2. Pour into popsicle moulds and freeze for 3-4 hours.
  3. Melt the chocolate chips into a pourable liquid, remove the popsicles from the freezer and drizzle the melted chocolate on top.
  4. Return the popsicles to the freezer for a further 15-20 minutes, or until the chocolate has set.
