No Bake Panna Cotta

Panna cotta is a light, creamy Italian dessert. Although ‘panna cotta’ translates from the Italian to mean ‘cooked cream’ this is a no-bake version of the classic dessert. Coconut milk and cacao butter pair with honey, vanilla and lemon zest, while gelatin gets the texture just right. Prepare this delicious dessert in individual molds and consider serving your favorite berries with it to add a splash of color and new flavor to the dish. Panna cotta goes well after an Italian meal of course, but you will find it is a wonderfully satisfying dessert after any type of main dish.

Ingredients:
2 cups full fat coconut milk
½ cup raw cacao butter
¼ cup water
2 tbsp raw honey
2 tsp grass fed gelatin
2 tsp pure vanilla extract
Zest of one lemon

Method:

In a medium sized bowl, mix the water with the gelatin, then set to aside. Using a saucepan, mix the coconut milk, cacao butter, vanilla extract, honey and lemon zest and warm until the butter is completely melted. Once the butter has melted, add the gelatin mixture and stir until well combined. Pulse the mixture for approximately 3 minutes in a blender or food processor, or until bubbles form throughout. Upon completion, pour the mixture into the desired mold(s) and place in the refrigerator for 3 hours, or until set.
