No Bake Coconut Bars

Coconut is a popular ingredient in many paleo recipes because it is natural, healthy and gives you energy as well as tasting good. Here we are mixing the coconut with honey, coconut oil, vanilla and salt to make these coconut-rich bars. You need to combine the ingredients, then press them into a dish and chill in the refrigerator, before cutting into bars. This is one of our most versatile no-bake recipes. Enjoy one of these bars for breakfast, take them to work or school to enjoy as an energy-boosting snack mid-afternoon, or bite into one for dessert after dinner. If you love coconut, this isn’t a recipe you shouldn’t miss out on.

Ingredients:
5 oz unsweetened shredded coconut
5 tbsp raw honey (vegan hack: use maple syrup)
4 tbsp coconut oil
1 tsp vanilla extract
1/4 tsp sea salt

Method:

Use a hand mixer to combine the shredded coconut, coconut oil, honey, salt and vanilla extract. Put the mixer on a low speed setting & blend until it is consistent throughout. Then pour the mixture into a deep square dish. Be sure it’s tightly packed in the dish by compressing the corners. Then refrigerate the mixture for 90 minutes or until firmly set. Once it is set to your desired firmness, slice and serve. Refrigerate in an air tight container for up to 7 days.

  3. Pour the mixture into a deep square dish and compress down into the corners ensuring that it is tightly packed. 4. Place the dish in the fridge and leave to set for 90 minutes.
  4. Once set slice and serve, or keep wrapped up in the fridge for up to 7 days.
