No Bake Chocolate Cookies
This is an awesome addition to your collection of paleo dessert recipes. Why no bake cookies, you ask? Because making cookies can be lots of fun. Standing over a hot oven in the middle of summer is most certainly not, which is why we love this no-bake cookies recipe. Everything you love about cookies, such as how sweet, chewy and yummy they are, you can expect in this paleo cookie recipe as well. We are combining coconut flour and coconut oil with honey, cocoa and cashew butter, along with a little vanilla, then setting the cookies in the refrigerator for an hour or two. There is absolutely no baking involved, and you don’t need to fire up the oven because these cookies are just perfect the way they are.
Ingredients:
2 cups coconut flour
¼ cup raw honey (Use Maple Syrup for a Vegan Version)
1 tbsp raw cocoa powder
1/3 cup organic coconut oil
1/3 cup cashew butter
2 tsp pure vanilla extract
Method:
Using a saucepan, combine the honey, cocoa and coconut oil and bring to the boil. Once boiling, immediately remove saucepan from the heat. Once you have taken the pan off the heat, stir in the cashew butter and vanilla extract until thoroughly combined. Once well blended, stir in the coconut flour completely. Then spoon the mixture into cookie shapes on a plate or sheet lined with parchment paper, and refrigerate for 2 hours to set.

- Once the pan is off the heat, stir in the cashew butter and vanilla essence until well combined, then stir in the coconut flour.
- Spoon the mixture into cookies on a plate or sheet lined with parchment paper, and leave to set in the refrigerator for 2 hours.
