Mint Chocolate Truffle
Truffles are versatile; they can be served as a snack or dessert, offered alongside an espresso or cappuccino, or even bagged up and given to loved ones as a special gift. You will love how easy these mint chocolate truffles are to prepare. Simply add all the ingredients to a food processor and pulse until you have a dough, and then you can divide the mixture into little balls and chill them until set. We are using desiccated coconut, cacao powder and honey as the main ingredient in these tasty little treats, and adding vanilla, peppermint and a little sea salt to get the flavor balance just right.
Ingredients:
2 ½ cups desiccated coconut
1 cups raw cacao powder
1 cup raw honey (vegan hack: replace honey with maple syrup)
¼ cup coconut oil
2 tsp pure vanilla extract
3 drops peppermint oil
A pinch of sea salt
Method:
Mix all of the ingredients in a blender or food processor and pulse for 3 to 4 minutes, or until a dough is formed. Using a spoon or hands, scoop the mixture into balls then place on a plate or sheet lined with parchment paper. Place in the refrigerator for 30 minutes before serving to allow to chill and set.
