Chocolate Chip Cookie Dough

Admit it, you like cookie dough just as much as the finished cookies! Rather than feeling bad about depleting your uncooked dough though, this recipe is designed to make cookie dough balls which can be savored as a sweet snack. All you need to do is combine the ingredients and your guilt-free cookie dough balls are ready for you to enjoy. Here we are using cashews and almond flour for nutty appeal, dates and chocolate chips for decadent sweetness, and a touch of vanilla which complements all the other ingredients. These paleo-friendly ingredients mean that any time you crave a sweet treat you can pop one of these in your mouth and enjoy the classic flavor.

Ingredients:

1 ½ cup raw cashews
½ cup blanched almond flour
1 cup pitted dates
½ cup raw cacao nibs or chocolate chips
2 tsp vanilla extract

 Method:

Using a blender or food processor, combine the almond flour and cashews and pulse until smooth. Into the blender add the dates and vanilla extract and process until a dough mixture is formed. Place the dough to a large mixing bowl and add in the chocolate chips. Then stir until well combined. Using a spoon or wet hands, take small portions of the cookie dough mixture and form into balls. Serve immediately or place in the refrigerator for 60 minutes to chill and firm, if desired.

  5. Use a spoon or wet hands, portion out the cookie dough mixture and roll into balls.
  6. Place into the refrigerator for 60 minutes to chill or serve immediately, if desired.
