Paleo Coconut Yogurt Smoothie Bowl
Save time and money with a delicious paleo smoothie bowl that will refresh and satisfy you at the same time. More so, this smoothie has flavors that are hardly ever offered in the major smoothie stores. Rather than paying for a sugar-packed concoction that may even be made with preservatives, make it yourself with Paleo friendly ingredients that will go really easy on your digestive system, and may help your metabolism.
Using coconut yogurt as the dairy substitute, this creamy background will be thickened and texturized by the expanding and flexible chia seeds. As you may know chia seeds naturally inflate and expand when they soak in any kind of liquid. The result is a pudding-like tapioca-ish consistency that does not require the use of gelatin or any other type of thickener.
chia seeds
Eating chia seeds can be good because they make you feel full without eating too much. Also, they match with every liquid and can be used for any drink, any smoothie, and any food.
Honestly, you can use whatever combination berries, fruit and vegetables that you like in this paleo smoothie bowl.
However, here’s what I used and you’ll need the following to make it (but make your bowl to suit your tastes):
Technology:
Blender or food processor
A covered container
Bowls
Food items:
- 1 container of blueberries
- 1/2 cup of strawberries
- 1/2 cup of raspberries
- 4 tbsp chia seeds
- ½ cup coconut water
- 4 pitted dates (halved)
- 2-3 sliced bananas
- 2 cups of coconut milk yogurt (do not confuse with dairy yogurt with coconut flavor)
- Options: almonds, pieces of bee pollen, coconut flakes
Procedure:
- Mix all the ingredients in the blender until it is smooth. The optional items can also be included in the mix. Sometimes those tiny bits pack a lot of extra flavor.
- When you are ready to refrigerate, transfer the mix to the container, lid on.
Alternatives:
Add avocado to the list of ingredients and blend it with the rest of the items. It will be delicious and super nutritious.
Add extra vanilla bean for a huge punch of taste
