Tropical Date Granola

Granola is such an awesome snack. This is one of the great paleo breakfast recipe ideas that creates a great morning ‘paleo cereal’ or a tasty afternoon snack.

Whether you serve this just as it is, with some coconut milk or paleo yogurt, or with fruit and fresh herbs, this granola is always spectacular. We are using almonds and macadamia nuts, as well as sunflower seeds, for crunch, and then pineapple, dates and orange juice to add sweetness. A little vanilla and cinnamon adds aromatic flavors.

Once the ingredients are well combined, you can bake the granola in the oven to dry it out and crisp it up. Watch it carefully when the cooking time is almost up because it can turn from golden brown (what you want) to dark brown (what you definitely don’t want) very quickly. This recipe makes about 8 servings, but you can double up and make a nice big batch if you want to eat this for breakfast every day. Just cook it in two batches unless you have two ovens.

What You Need:

1 cup diced fresh pineapple
2 tablespoons orange juice
1/2 cup chopped, pitted dates
1 teaspoon ground cinnamon
1 tablespoon vanilla extract
1/2 cup melted coconut oil
3 cups raw coconut flakes
3 cups raw almonds
1/2 cup raw sunflower seeds
1 cup chopped raw macadamia nuts
1/2 teaspoon sea salt

How to Make It:

Preheat the oven to 250 degrees F and line 2 baking sheets with aluminum foil. Put the pineapple, orange juice, dates, cinnamon and vanilla in a blender or food processor and puree.

Now add the melted coconut oil and blend until smooth. Combine the coconut flakes with the almonds, sunflower seeds, macadamia nuts and salt in a bowl, tossing with your hands to mix.

Spoon the date mixture into the dry mixture and mix well. Now divide the granola between the 2 prepared baking sheets and cook for 2 hours, tossing every 20 minutes. Rotate the trays halfway through. Let the granola cool to room temperature, then store in an airtight container for up to 2 weeks.
