Triple Layer Raspberry Smoothie
Perhaps you are not hungry enough for a full cooked paleo breakfast but you want something more substantial than a simple smoothie. This unusual recipe combines a fruit smoothie with some juicy whole raspberries for added sweetness and nuts for crunch. You can use thawed raspberries if you want, but fresh ones look better in the finished smoothie. Swap them for strawberries if you prefer.
The smoothie includes a pitted date or some honey for sweetness, along with pecan halves and flax seed meal to thicken it a little. Then you have bananas and raspberries in there too, for plenty of delicious fruitiness and a gorgeous pink color. If you have some bananas which are past their prime (that stage between brownish and black!) throw those in, because they are great for smoothies.
As for the other layer, consider pine nuts, pecans, sliced almonds, or even shredded coconut or a paleo-friendly cereal. This recipe makes 2 servings but it is very easy to double. We like to make the smoothie mixture quite thick, so the raspberries and nuts stay in place, although you can thin it down if you prefer.
What You Need:
2 chopped bananas
2 tablespoons pecan halves
1 tablespoon flax seed meal
1 tablespoon coconut oil
1 pitted date or 1 teaspoon honey
1 1/2 cups water
1 1/2 cups raspberries
1/4 cup mixed nuts or paleo-friendly cereal
How to Make It:
Blend the bananas, pecan halves, flax seed meal, coconut oil, date or honey, and water with 1 cup of the raspberries in a blender until smooth. If the mixture is too thick, you can add another splash of water and blend some more.
Divide half of this mixture between 2 glasses. Top with the remaining raspberries then the nuts or cereal. Pour or spoon the rest of the smoothie on top and serve.
