Spicy Breakfast Sausages

A lot of commercially prepared sausages are not suitable for a paleo diet because they are filled with all kinds of things you want to avoid, such as sugar, preservatives and, in many cases, poor quality meat. Fortunately, making your own sausages is very simple and requires little more than combining ground meat with flavorings, and shaping then pan-frying the sausages.

You can use ground pork or try another type of ground meat such as beef, turkey or chicken. We like to add sage, nutmeg, thyme, rosemary and some hot pepper flakes to add plenty of flavor. Feel free to add whichever herbs and spices you like. You might even like to add a little honey or maple syrup to add a touch of sweetness which contrasts well with the spice.

Once the ingredients are combined, you can shape sausages or patties, as you prefer, and cook them in coconut oil or another preferred fat, until they are golden brown. These are great served with scrambled or fried eggs, along with some tomatoes and mushrooms perhaps.

What You Need:

1 lb ground pork
2 teaspoons finely chopped fresh sage leaves
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
1 teaspoon finely chopped fresh thyme
1 teaspoon kosher salt
3/4 teaspoon black pepper
1/4 teaspoon chopped fresh rosemary
Coconut oil or paleo-friendly cooking fat, as needed

How to Make Them:

Combine the pork with the sage, nutmeg, cayenne, red pepper, thyme, salt, black pepper, and rosemary. Use your hands to mix the ingredients, then shape into 8 short sausages.

Heat a little coconut oil or other fat in a skillet over a medium heat. Add the sausages and cook for about 15 minutes, or until browned all over and cooked through. Serve hot with scrambled eggs or perhaps some broiled tomatoes or mushrooms.
