Savory Tomato Smoothie
Perhaps you want to start the day with something light but not necessarily sweet, in which case this nutrient-rich, paleo breakfast tomato smoothie might fit the bill perfectly. It makes a change from fruit-based smoothies but is equally satisfying.
We are using tomatoes, bell pepper, fresh basil, celery and black pepper to make it, along with some cilantro if you have it, and many people also like a touch of cayenne pepper in there to give it a kick. If you don’t have bell pepper, just omit it and use 4 tomatoes in the smoothie. You can add a strip of cucumber for garnish if you want. This is perhaps a good recipe to make if you have fresh tomatoes which are a little past their prime – too soft to use in a salad. Once they are blended with the other ingredients, they will be delicious.
There are plenty of immune system-boosting vitamins and antioxidants in here. You might like to enjoy this paleo smoothie with some scrambled eggs or paleo pancakes or, if you’re just not that hungry, have it by itself as a light start to the day. This recipe makes 2 small servings or 1 large one. You might even want to double the recipe and take some to work with you in a thermos; give it a good shake and have it with your lunch.
What You Need:
1 cup water
8 ice cubes
3 quartered large tomatoes
1/2 red bell pepper
8 basil leaves
1 chopped celery stalk
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
2 sprigs cilantro
Cucumber, for garnish (optional)
How to Make It:
Put the water, ice, tomatoes and bell pepper in a blender, and pulse until the mixture is smooth. Now add the basil, celery, black pepper, cayenne pepper, and cilantro. Blend until smooth, then garnish with some cucumber if liked.
