Paleo Banana Bread with Walnuts Recipe
Bread is a popular breakfast food, so why not transform it into a wonderful paleo breakfast option. The great thing about a paleo loaf is you can make it ahead, then just cut yourself a slice at breakfast time. For those mornings when you just want to grab something tasty instead of having to cook, this banana bread is perfect.
This banana bread can be served sliced with butter, or you can dip the slices in beaten egg and cook them French toast style, then serve with berries or chopped fruit on top. If you prefer to make muffins instead of a loaf, use muffin cups and reduce the baking time by about a half.
What You Need:
2 1/2 cups mashed banana
1/2 cup almond butter
4 eggs
4 tablespoons melted grass-fed butter or coconut oil
1/2 cup coconut flour
1 tablespoon ground cinnamon
1 1/4 teaspoons baking soda
1 1/2 teaspoons lemon juice
1/4 cup chopped walnuts
1/8 teaspoon sea salt
1 teaspoon vanilla extract
How to Make It:
Preheat the oven to 350 degrees F. Put the banana, almond butter, lemon juice and egg in a blender with the butter or coconut oil, and mix well. You can mix the mixture by hand in a mixing bowl if you prefer. Now add the cinnamon, baking soda, walnuts, coconut flour, salt and vanilla extra and stir well.
Spoon the batter into a greased loaf pan or silicon pan and smooth the top with a spatula. Bake for about an hour or until a toothpick inserted into the center comes out clean. Take the banana bread out of the oven and turn it out on to a cooling rack.
