Paleo is known world-wide as an anti-inflammatory diet. Upon being diagnosed with a rare form of Multiple Sclerosis, Jack Osbourne, son of musical legend Ozzy Osbourne, was advised to follow the Paleo diet lifestyle as a way to prevent flare-ups and symptoms that would weaken him. He effectively followed the plan and still vouches for it. The benefit of Paleo is that every nutrient that is consumed during the day goes straight to your body as something useful, consumable, and easy to burn and digest. Why not start your day right, and eat the foods that heal, from the moment you get up until the moment you go to bed?
Many typical paleo breakfast meals are composed of eggs prepared a variety of ways and maybe some breakfast meat. As such, many dieters complain of running out of ideas for breakfast pretty quickly. So we decided to compile a series of easy paleo breakfast recipes, in hopes of getting the creative juices flowing for paleo eaters and bringing a bit of diversity to the breakfast meal.
We will be posting a new paleo-friendly breakfast recipe each day for the next 30 days.
Let’s jump right in to our first paleo breakfast recipe from our new series ‘30 Days of Paleo Breakfast Meals.’
30 Days of Paleo Breakfast Meals
(Day 1)
Nutty Breakfast Bars
This is a nice make-ahead recipe, and the bars are packed with nutrients and crunch. You can use any kind of nuts you like in this recipe, and we are also using coconut, dried fruit, coconut oil, almond butter and honey, along with vanilla and cinnamon for flavor.
The nuts need to soak overnight and then you can chop half and grind the rest. The rest of the ingredients can be combined, and then you can add the nuts, and press the mixture into a pan. This then needs to sit, then you can freeze it for an hour. Finally you can cut it into bars and enjoy them for breakfast.
Although this recipe takes a while to make, you can make the bars ahead and then simply grab one from the refrigerator for a nutritious breakfast in a hurry! The whole family will love the tasty crunch these paleo-friendly bars offer.
What You Need:
4 cups nuts (any kind)
1 tablespoon salt
1/3 cup almond butter
1/3 cup coconut oil
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup raw honey
1 cup shredded coconut
1 cup dried fruit (raisins or chopped dates, for example)
How to Make It:
Put the nuts in a bowl, add the salt and pour on enough water to cover, then let them soak overnight. Drain them and rinse them in a colander. Now arrange them in one layer on a baking sheet and roast them for 10 hours at 150 degrees F. Let them cool then chop half of them. Pulse the remainder in a food processor until powdered.
Put the almond butter, coconut oil, vanilla, cinnamon and honey in a pan over a moderate heat, and warm the mixture until you see bubbles. Take the pan off the heat. Combine the chopped and ground nuts with the almond butter mixture, shredded coconut and dried fruit. Line a dish with parchment paper and pour the nut mixture in there. You want to make one single, tightly-packed layer.
Put another piece of parchment paper on top and let the mixture sit for a couple of hours at room temperature. Freeze for an hour, then slice into bars and serve or keep in the refrigerator.
