Bacon & Tomato Frittata

Frittata is an excellent egg-based paleo breakfast idea that you can prepare ahead. We are using red onion, bacon and tomatoes in there, and some baby spinach also works well if you have it. However, you can always get creative and try other toppings as you see fit. Frittatas are so flexible you can add almost anything, just check out another one of our yummy frittata recipes and you’ll see that there are so many options when creating this delicious breakfast meal.
The frittata is made in an ovenproof skillet, so you can start it on the stove and then finish it in the oven. If you choose to make this ahead, it keeps for a couple of days in the refrigerator and anyone in a rush in the morning can grab a slice before they run out the door to work or school!
Why not try different additions, such as ham, mushrooms, bell peppers or dried herbs? A frittata is similar to an omelet but cooked on the stove and in the oven rather than just made in a pan. If you like hearty breakfasts, you should enjoy this delicious frittata recipe. It will certainly keep you satisfied until lunchtime. The following recipe serves four people.

- 10 large eggs
- 1 thinly sliced red onion
- 5 chopped bacon slices
- 4 oz baby spinach leaves (optional)
- 2 thinly sliced small tomatoes
- 1 tablespoon paleo-friendly oil
- Fresh basil leaves, for garnish
- Salt and black pepper, to taste
- Preheat the oven to 350 degrees F.
- Whisk the mustard and eggs, then add some salt and black pepper.
- Heat the oil in an ovenproof skillet and cook the onion and bacon for 5 minutes or until the onion is golden.
- Add the spinach if using, and cook for another couple of minutes.
- Add the egg mixture and cook until slightly set, then arrange the tomato slices on top.
- Keep cooking until it's set around the edges only, then bake in the oven for half an hour or until golden and set in the middle.
- Garnish with basil leaves (optional) and serve.
