Coconut & Vanilla Pancakes
These paleo breakfast pancakes are made with coconut flour (which is basically ground-up coconut) along with eggs, honey, vanilla and more, to give the perfect flavor and consistency. Coconut flour is a good source of copper, iron and manganese, along with other minerals. Take care not to overmix the batter for these, and don’t worry if there are a few small lumps in there.
This recipe makes enough for 2 people but you can choose whether to make 2 big pancakes or several smaller ones. Serve the pancakes with honey or maple syrup, and perhaps add some fresh fruit to the plate too, such as strawberries, raspberries or a chopped peach. You might like to garnish them with fresh mint sprigs too.
What You Need:
3 eggs
1 tablespoon raw honey
2 tablespoons cold-pressed coconut oil
1/2 teaspoon vanilla extract
1/4 cup coconut milk
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 cup coconut flour
Grass-fed butter, as needed
How to Make Them:
Whisk the eggs with the honey and coconut oil. Now mix in the vanilla and coconut milk. Stir in the baking soda, salt and coconut flour, but don’t overmix the batter.
Melt a little butter in a skillet, then add a ladle of the mixture to the pan. Cook until the underside is lightly browned, then flip and cook the other side. Serve immediately, perhaps with honey or maple syrup drizzled over them.
