Paleo Breakfast Cinnamon Rolls Recipe

Made with coconut flour and almond flour, along with honey, vanilla, cinnamon, honey and nuts, these cinnamon rolls make an exquisite paleo breakfast food for those with a sweet tooth. It takes a while to make them, and you need to freeze the dough for 15 minutes in the middle of the preparation, but these are well worth making if you love the taste of cinnamon and the idea of something warm from the oven with plenty of flavor appeals to you first thing in the morning. The glaze is optional but recommended.

What You Need:

To Make the Rolls:

1 egg
1 tablespoon honey (vegan hack – substitute maple syrup)
1 teaspoon vanilla extract
2 tablespoons melted coconut oil
1 tablespoon coconut flour
1 1/2 cups almond flour
1/8 teaspoon salt
1 teaspoon baking soda
1 tablespoon cinnamon
1/4 cup finely chopped walnuts
1/4 cup finely chopped, pitted dates

To Glaze the Rolls (Optional):

2 tablespoons coconut cream                                                                                                                                          2 tablespoons honey (vegan hack – substitute maple syrup)
1/8 teaspoon ground cinnamon

How to Make Them:

Whisk the egg with the honey, vanilla and coconut oil in a bowl. Add the coconut flour, almond flour, salt and baking soda. Stir well to mix into a dough. Put the sheet on wax paper and cover with another sheet of wax paper. Roll the dough into a rectangle. Discard the top piece of wax paper.

Drizzle the honey over the dough, then sprinkle the cinnamon over it. Top with the walnuts and dates. Roll the dough into a log, then freeze it for 15 minutes.

Preheat the oven to 325 degrees F and cut the dough log into 10 pieces. Arrange them on a baking sheet and bake for 10 minutes or until golden brown. Stir the coconut cream, cinnamon and honey together to make the glaze if you are making one, then drizzle it over the cooked cinnamon rolls. These are best served warm.
