Chicory Coffee Protein Shake

Paleo breakfast can take many shapes and forms, if you use your creativity. I love having this ‘cup of iced coffee’ for my breakfast of paleo champions. It’s surprisingly filling and a breeze to make.  Let’s jump right in!

Some people might only have a cup of coffee for breakfast but that isn’t really breakfast, is it? That is why this recipe incorporates banana, cashew milk, protein powder, vanilla and cinnamon to round the coffee out into something thick, tasty and satisfying. You can make this quickly and easily in a blender, and serve it over ice or just as it is.

Not everyone wants a hearty breakfast in the morning, especially those who wake up early and just want to drink something instead of firing up the stove and cooking a meal. This chicory coffee protein shake, or smoothie, can be prepared in about 5 minutes flat, or even less, making it a very attractive option for a hectic morning.

Some paleo eaters avoid coffee because it is a stimulant. You can use decaffeinated coffee if you want to have regular coffee in there, or even stick with chicory root coffee which does offer a similar flavor but is not a stimulant. You can find chicory coffee granules in any health food store. It is best to taste the shake before adding honey or another sweetener, because the banana tends to sweeten it enough for most palates. This recipe makes one serving but double or triple it if you are feeding more than one.

What You Need:

2 oz strong brewed ‘chicory root coffee’ (or regular coffee)
1/2 banana
2/3 cup ice cubes
1/2 cup cashew milk
1/4 cup unflavored egg white protein powder
1/2 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
Honey (optional)

How to Make It:

Put all the ingredients except the honey in a blender and blend until smooth. Pour into a glass, over ice if liked, and serve right away. You might like to add some honey to taste, but because the banana already gives sweetness, taste the shake before adding any.
