Apple Zucchini Fritters

This amazing recipe is all fruit & veggie and zero nonsense. There are different ways to go about it, and you only need a minimal amount of ingredients to create a sweet and savory paleo appetizer that no one will forget.

Ingredients

2 zucchinis

2 carrots (I buy mine already shredded)

1 cup coconut flour ( you can also use almond flour instead)

1 beaten egg

Scallions or onions are optional

chopped dill, parsley

¾ cup finely chopped apples (optional, but adds a superb sweetness to your fritter. Highly, recommended)

sea salt

Soften the apples and vegetables by letting them soak in water and salt for 10 minutes prior to starting.

sually the idea is to mash all the vegetables, egg, and spices together into a mush, but do not liquefy it. Let the chunks of vegetables stick together. Make the patties using the flour. If you are scared of making the fritters too big in size, try rolling them as sticks. They will still be “zucchini fritters” but call the veggie sticks if you want.

You may be able to come up with other ways of making the fritters; you can shape them like balls, or even like donuts. Here is the thing: You do not need to deep-fry them. Less than a cup of coconut or olive oil can do the same trick as a deep fryer. If you have a very good heat-conducting pan, just spritz it with oil and you can also get the outside crunch and the inside tenderness that you want to get in these types of foods.

Pairings:

These fritters are the perfect alternative to any side dish and make one of the tastiest paleo appetizers.  Pair them with soups, meats, or even casseroles to add zing to the meal.  Make a coconut cream-based cucumber dill sauce by adding chives and dill, sea salt, pepper to the sauce.

The fritters make awesome starters for parties and family dinners.

Other alternatives:

  •  Indian: Switch chopped apples for curry powder and serve with mango or cilantro chutney for an Indian flavor
  •  Primal: Replace the apples with parmesean cheese
  •  Feel Greek? Add a tapenade to the original mix  and make a Paleo version of tzatziki to dip
  •  Mexican: Add ground beef and taco seasoning.  Serve the patties with fresh salsa.
  •  Breakfast: Add more eggs! Add non-cured bacon or ham and have them for breakfast! Veggies for breakfast? Why not? Better start early!

  • 2 zucchinis

Instructions
  1. Shred apples, zucchini, carrots and onions (if using) in a food processor or veggie chopper
  2. Dump shredded ingredients into a colander and let any excess water drip away
  3. Let sit for 5 minutes and pat dry to remove the remaining water and place in a large bowl
  4. Add egg, flour, and chopped parsley and mix thoroughly
  5. Salt & pepper to taste
  6. Warm oil in large pan over medium heat
  7. While oil is heating, form fritters using the batter into desired shapes & sizes
  8. Drop fritters into pan forming a single layer and cook for 2 to 3 minutes on each side
  9. Continue cooking fritters in single layers until the batter is gone
  10. Serve warm and garnish with chopped dill, if desred
