Mr Grumpy has been away this week, so dinner has been about simple dishes that require minimal washing up. We harvested our first zucchini this week, so I broke my unwritten rule and cooked pasta twice. I like to keep variety in my menu plan, and usually only plan one pasta meal each week. However sometimes things don't go to plan, and pasta is the perfect quick and easy meal after a busy day. The fish I had on the menu for Wednesday night has been moved to next week, which makes one less meal to work out next week.

Homemade Baked Beans on homemade sourdough toast.
Monday
Baked Ricotta & Caramelised Onion Tortellini, tossed in a sage butter sauce.
This is such a quick & easy dish. I bought the tortellini, and any variety will work in this dish. Whilst the pasta is cooking, melt some ( lots) of butter in a fry pan, and toss in a handful of sage leaves. Season with salt & pepper, and squeeze over the juice of half a lemon. Drain the pasta when ready, reserving a little cooking water. Toss the tortellini in the pan with the sage butter and stir to coat. If it looks a little dry, add a splash of cooking water. Serve with lots of freshly grated Parmesan cheese.

Simple Chicken Curry served with brown rice.
I found a packet of curry paste that needed using in the freezer, so I followed the recipe on the back of the packet. I did add in the remainder of the zucchini from Wednesday's meal, and the rest of the beans from Tuesday's meal to add some vegetables to the dish.

No freezer cooking this week due to Mr Grumpy's absence, and my lack of desire to do the dishes. Maybe next week.
