Our Real Food Meal Plan – Week 32

I had grand plans for my time off, none of which came to pass. I did, however, enjoy a much needed break, and have returned refreshed and inspired.

The weather is playing havoc with my menu planning at the moment. The temperature is up and down, so some days I can turn on the oven, whilst on other days I need to resort to the BBQ. That aside, this week we ate:

Sunday

Mexican Corn Hash from Breakfast Morning, Noon & Night.

This was a mix of spiced fried zucchini, corn and feta cheese, and was very, very good. I know this as The Princess went back for seconds, which only happens when she really enjoys a meal. I served it in flour tortillas, with refried beans and chipotle sour cream.

Monday

Ravioli Lasagna Bake, served with a green salad.

Boil 1kg of ravioli until just tender. Spread a layer of Slow Cooked Tomato Pasta Sauce over the bottom of a large casserole dish. Scatter over half of the ravioli, top with a layer of pasta sauce, and then a layer of Simple Bechamel Sauce. Repeat with the remainder of the ravioli, pasta sauce and bechamel sauce. Scatter grated mozzarella over the top, and bake at 200C (180C fan forced) for about 40 minutes, or until golden brown.

Tuesday

Russian Salad with Golden Paprika Chicken from Everyday Super Food by Jamie Oliver. Served with homemade wholemeal bread.

What can I say. This dish was not a success, and neither Mr Grumpy nor The Princess really enjoyed it. Mr Grumpy's final comment on this salad: "It's perfectly fine. I just don't get it. Don't make it again."

Wednesday

Oven Baked Fish Nuggets with Sweet Potato Chips and Creamy Silverbeet Gratin.

Thursday

Slow Cooker Beef Adobe from the Ultimate Slow Cooker: Over 100 simple, delicious recipes. Served with brown rice and Marinated Bean Sprouts from Asian Pickles.

Freezer Cooking

I made a huge batch of fish nuggets, and shallow froze what we didn't eat for dinner. Once frozen, I packed the nuggets into zip lock bags. These nuggets can be shallow fried from frozen for a quick meal for one.

I also made many Easy Lasagna Cups on the weekend. Mr Grumpy & The Princess forgot to take them for lunch, so I froze them for another day. The Princess can easily take one out of the freezer, and pack it in her lunchbox after a quick defrost in the microwave.
