Cooking for a teenager is a truly thankless task. The Princess has been thoroughly unimpressed with my efforts at dinner this week. So much so, she decided to make herself a toasted sandwich on Monday night rather than eat the meal I had prepared. Her loss really, as Mr Grumpy and I quite enjoyed it.
On another note, school holidays have started here today. I am going to take a small break to spend some time with The Princess, and as a result will be posting less frequently over the next couple of weeks. Just in case you were wondering where I had gone.
It seems to be Jamie Oliver week in my kitchen, as most of my menu incorporates his recipes. Our lettuce is now big enough to pick, hence the abundance of green salad as a side dish. This week we ate:
Sunday
Italian Sausage Pasta Bake with Green Salad.
Monday
Butter & Sage Gnudi from Jamie Oliver's Comfort Food: The Ultimate Weekend Cookbook, served with a Green Salad.
These are ricotta gnocchi in a butter & sage sauce. The Princess hated these for some reason, and made her own dinner. Don't let that deter you. Mr Grumpy and I really liked them, and felt she was just being dramatic.
Tuesday
Chicken Pie from Save with Jamie: Shop Smart, Cook Clever, Waste Less. Served with Roasted Broccoli with Garlic and Anchovies.
Wednesday
Tasty Fish Bake from Jamie's Dinners: The Essential Family Cookbook, served with a Green Salad.
Thursday
Speedy Minestrone Soup with homemade sourdough bread.
Freezer Cooking
The gnudi made enough for dinner, with enough uncooked gnudi for another meal. I have frozen these for dinner on a night that The Princess is not home.
Mr Grumpy roasted a whole chicken in his new BBQ on the weekend. Most of the meat went into the chicken pie on Tuesday night, with the carcass going into the freezer for chicken stock. I only used about a half of the chicken pie filling, so have frozen the rest for individual pies.
