ooh la la guacamole!
Yup. I’m a Californian. I love my avocados. But I love guacamole even more. I wasn’t always a fan actually. Until I was in my early 20’s I absolutely despised the taste…. until my good friend’s mom made it for me {because she couldn’t believe that I didn’t like it!}…. and from that point on we have been inseparable. So in honor of her…. here is seriously the best guacamole recipe:
Guacamole Recipe:
{makes a pretty good sized bowl… however I could eat it all myself}
What you will need:
2-4 Ripe Avocados {for this recipe I used 2}-
{to make sure they’re just the right amount of ripeness when you buy them at the store… gently squeeze the fruit and the skin should give just a little bit… if it does’t it’s not ripe… too much give and the inside will be brown from too much handling… if you can’t find ripe ones put them in a brown paper bag and they should be ripe in a few days}
Sea Salt and Pepper to taste
Half of a small onion finely chopped
1 Small Tomato finely chopped
The juice of half of a lime
1 t. of crushed garlic {but you can use a fresh clove if you want}
1/4 Salsa {as spicy as you’d like}
A few dashes of chili powder
1 T. of Ranch Dressing or Mayo {I prefer Ranch}
1/2 Fresh Jalapeno finely chopped {you can leave this out if you don’t want any spice, I don’t add this if I’m sharing with the hubs… he hates spicy food!}
Getting down to the nitty gritty.
Halve and scoop out the insides of the avocados and place in small bowl. Mash with a fork and stir gently.
Chop your onion, jalapeno, and tomatoes if you haven’t already.
Stir in the remaining ingredients… finishing with the seasoning and squeeze of lime juice. And viola! Seriously the best guacamole ever!
Just try not to eat it all in one sitting! Happy Fathers day to all the papas out there!
