One-Pot Wonders: Chicken Sauce Piquante

Being a New Orleans girl at heart, and finding my passion for food in the Big Easy at fifteen, one of the dishes I have grown to love is Chicken Sauce Piquante. A full flavored, chunky, peppery, mouthful of goodness, this is a go-to dish for many reasons.

Chicken Sauce Piquant reminds me of fall, family, football, and good old comfort food to feed a flock. It is the perfect dish to include in Emeril Lagasse‘s newest cookbook, Sizzling Skillets and Other One-Pot Wonders, to be released September 27th, as the recipes are meant to feed and nourish the soul!

The cookbook is divided into categories such as Casseroles, Big Pots, Skillets, Slow Cookers and Woks, which I found to be very helpful. I often wonder, when I actually attempt someone else’s recipe, which pot to grab. Haven’t you ever had to change pots mid-stream because you made too much in a smaller pot? Well, I have!

The nineteen bloggers, listed in the “Party” widget to the right, and sponsored by Morrow Cookbooks – The Secret Ingredient, have come to the consensus that the recipes in Sizzling Skillets will feed a large family or please a hungry crowd! We have also found that they can easily be cut in half if need be.

Emeril’s recipe for Chicken Sauce Piquant is very similar to the one I already use, except in his you flour the chicken, and in mine you use flour to make a roux.

His also calls for a whole cut-up chicken, and in mine, I use chicken breasts. But the biggest difference is that Emeril’s recipe calls for a crock-pot!

The chicken is floured and sautéed in a pan, followed by a sauté of the vegetables, and then the dish is moved to a slow cooker to finish out its cooking process. Three hours later, a dish, rich in color and taste is ready to eat! I spooned it over a bed of rice, and placed the plump juicy chicken and sauce on top with a parsley garnish.

The recipe from Sizzling Skillets and other One-Pot Wonders was easy to follow, and the outcome was a delicious and lighter version of my Louisiana favorite.

Emeril's Chicken Sauce Piquante

For a fall cookbook, this is an excellent choice. It is also the perfect time of year to launch a cookbook of this nature, as again, it will satisfy a crowd of tailgaters and feed a hungry troop of Trick-or-Treaters! With Thanksgiving peeking around the corner, you may also find many delectable recipes for which your leftover turkey can be used.
