NGNO’S Cranberries Quinoa Salad

The name Quinoa is derived from the Spanish name Kinwa. It originated in the Andean region of Ecuador, Peru, Colombia and Bolivia. 

Quinoa is a grain-like crop grown for its edible seeds. It is not considered to be a true cereal as it is not a member of the true grass family. It is more likely considered to be related to spinach.

N.B: 1 cup of Quinoa equals 185 grams of Iron

Ingredients:

  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Halloumi cubes
  • 1/2 cup dried Cranberries
  • 1/2 cup of roasted finely chopped almonds
  • Freshly ground Sea Salt to taste
  • Freshly ground black pepper to taste
  • 4 tbsp of balsamic cream
  • 8 tbsp of extra virgin olive oil

Quinoa

Directions:

  1. Bring water to a boil.
  2. Add quinoa, cover, and reduce heat to medium-low.
  3. Simmer 12 to 14 minutes.
  4. Drain Quinoa and rinse under cold running water. Drain again.
  5. Add the Quinoa to the Halloumi, Blackberries and Almonds.
  6. Mix well then add the salt, pepper, Balsamic cream and olive oil.
  7. Enjoy this easy and healthy dish
