The name Quinoa is derived from the Spanish name Kinwa. It originated in the Andean region of Ecuador, Peru, Colombia and Bolivia.
Quinoa is a grain-like crop grown for its edible seeds. It is not considered to be a true cereal as it is not a member of the true grass family. It is more likely considered to be related to spinach.
N.B: 1 cup of Quinoa equals 185 grams of Iron
Ingredients:
- 1 cup Quinoa
- 2 cups Water
- 1 cup Halloumi cubes
- 1/2 cup dried Cranberries
- 1/2 cup of roasted finely chopped almonds
- Freshly ground Sea Salt to taste
- Freshly ground black pepper to taste
- 4 tbsp of balsamic cream
- 8 tbsp of extra virgin olive oil
Directions:
- Bring water to a boil.
- Add quinoa, cover, and reduce heat to medium-low.
- Simmer 12 to 14 minutes.
- Drain Quinoa and rinse under cold running water. Drain again.
- Add the Quinoa to the Halloumi, Blackberries and Almonds.
- Mix well then add the salt, pepper, Balsamic cream and olive oil.
