When it comes to family friendly meals a homemade pizza can't be beat! This Mushroom Flatbread is bursting with flavor. From the crispy thin homemade crust, to the roasted mushrooms, and gooey mozzarella, you'll have a meal that makes everyone happy!

The best part of this delicious flatbread is that it's way healthier than take-out. The crust is made with whole wheat flour, the cheese is reduced, and the toppings are nutrient rich.

You can also change up the toppings if you don't have a mushroom lover in the house!

How to Make Mushroom Flatbread with Roasted Vegetables - Step by Step

Step 1: Prepare the dough: In a bowl combine whole wheat flour with dry yeast and salt. Add water and 2 tbsp olive oil and mix until you have a sticky dough.

Step 2: Continue mixing for 4 more minutes and until you have a soft, elastic dough. Cover and let it rise for 1 hour.

Step 3: Preheat oven to 400 degrees F. Flour a baking pan and set aside. With the help of a rolling pin, roll the dough. Transfer to the prepared baking pan.

Step 4: Top the flatbread with tomato sauce and diced tomatoes. Then top with mozzarella cheese and mushrooms. Drizzle with 1 tsp olive oil.

Step 5: Put the flatbread in the oven and bake for 15 minutes or until the borders are golden brown and the cheese is fully melted.

Step 6: Remove from oven and top with pesto, fresh basil, and black pepper to taste.

What is the best dough to use for a flatbread pizza?

This recipe uses a homemade whole wheat crust. To save time you can buy pre-made whole wheat dough from Trader Joe's or Whole Foods. They also have other whole grain flatbread that can be used as a substitute for homemade.

Just be sure to get one that is whole grain to increase the fiber and nutritional value.

What are the best mushrooms to use?

I like to use Cremini, buttons, or shiitake mushrooms. All these mushrooms are small in size which makes it easy to slice and top them on pizza. Mini bellas would be another good option. However, you can use whatever mushrooms you have on hand. Be sure to wash them well.

What do you serve with Mushroom Flatbread?

This flatbread makes 4 small, or 2 large servings. For a family of 4 I suggest serving it along with a light salad, some steamed vegetables, or a hearty soup.

Top Tips for Making the Best Mushroom Flatbread

  • Be sure to give the pizza dough enough time to rise.
  • Cover dough with a damp towel.
  • Dough will double in size when it's ready.
  • If you want to save time use a store bought pizza dough. I suggest Trader Joe's or Whole Foods' fresh whole wheat pizza dough.
  • If there's someone in your family that's not a fan of mushrooms, choose other healthy veggie toppings such as spinach, zucchini, broccoli, squash, tomatoes, or anything else you have in the fridge.
  • Make sure your oven is preheated before putting the pizza in the oven.
  • Feel free to change up the cheese on this pizza: parmesan, an Italian shredded cheese blend, or even goat cheese would all work well.
