Moist & Delicious. {Vegan Oatmeal Raisin Cookie Recipe}

I love a good batch of cookies. And I like mine extra chewy. I needed to find an easy vegan cookie recipe for my wonderful friend, and I came across this one here! And let me tell you, it is amazing. Well it doesn’t help that I forgot the cookies when I met my friend, so she got them late, and with half as many. Hmmm, let’t just say the kid ate them.

Moist & Delicious.  {Vegan Oatmeal Raisin Cookie Recipe}

{I made a few substitutions from the original… used cranberries, increased cinnamon, and used coconut oil}

 Vegan Oatmeal Raisin Cookie Recipe
  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 T. cinnamon
  • 1/2 cup brown sugar 
  • 1/4 cup granulated sugar
  • 2 tablespoons maple syrup
  • 1/4 cup applesauce
  • 1/4 cup coconut oil
  • 1/2 teaspoon vanilla
  • 1 1/2 cup rolled oats
  • 1/2 cup dried cranberries or raisins
  • Walnuts (optional)
Instructions
  1. Preheat oven to 350 degrees F. Line two cookie sheets with Silpats.
  2. Mix together the flour, baking soda, salt and cinnamon. Set aside.
  3. Mix both sugars, maple syrup, apple sauce, oil and vanilla together in a medium bowl. Add the flour mixture and stir until blended. Stir in the oats, followed by raisins.
  4. Let sit for 10 minutes.
  5. Drop by rounded teaspoonfuls onto the cookie sheets. Bake for 12-14 minutes. Let cool for about 5-8 minutes on cookie sheets then carefully scoop up onto a wire rack
