My kids are loving these berry yoghurt popsicles at the moment. We’re still enjoying lots of hot summer weather and these frozen pops make a delicious and refreshing snack. Homemade snacks are always a winner because you can control exactly what goes into them, and often homemade is just tastier than store-bought.

Ever wondered how to make your own yoghurt popsicles? Read on! I make these pops with an easy mixed berry compote, coconut flavoured yoghurt and a basic toasted oat granola. There’s not too much prep involved and you can even customise the recipe with different yoghurt flavours and your favourite berries. Did I mention how much the kids love them?

Keep a stash of these in the freezer for those hot days and for afternoon snacks, I’m sure you’ll love them! And don’t forget to share your yoghurt pop pics on the socials and tag me!

MIXED BERRY & GRANOLA YOGHURT POPSICLES
- Servings: 6
Berry compote
- 200 g mixed frozen berries
- 25 ml castor sugar
- 25 ml water
- 10 ml (2 tsp) fresh lemon juice
- 5 ml (1 tsp) cornflour
To assemble
- 250 ml (1 cup) full cream coconut flavoured yoghurt
- 5 ml (1 tsp) vanilla paste
- 15 ml (1 tbsp) runny honey
- 150 ml granola
- 6 x 75 ml popsicle moulds
1.) To make the compote place the berries, sugar, water, lemon juice and cornflour in a pot. Stir together to dissolve the sugar. Allow to boil gently for 10 minutes until slightly thickened. Mash the fruit with the back of a wooden spoon as it boils and stir regularly. Set aside to cool completely.
2.) Place the yoghurt in a bowl. Add the vanilla and honey and whisk to combine. Remove 3 tablespoons of the mixture and set aside. Add the berry compote and fold in gently a few times to swirl together. They do not have to be completely mixed.
3.) Combine the granola with the yoghurt you set aside earlier. Fill each mould about one third full with yoghurt berry mixture. Divide the granola between the moulds, pressing it down gently in the mould, then top each one up with yoghurt. Insert the sticks then pop in the freezer until frozen solid.
Tip: run some hot water over the outside of the mould for a few seconds to help loosen the berry pop so it slides out easily.
